A classic "SparklingAle" style ale. Crystal malts give this generously hopped ale its distinct golden appearance.We're now using Pallisade hop in two late additions for flavour and aroma which varies the original recipe a little. Hop availability during recent times has been a real bane for craft brewers but we accept it as enabling greater experimentation and diversity in our brewing. This is one beer that has benefited from the recent shortages of certain hops and the need to try alternatives.To achieve a beer more like Coopers Sparkling Ale you will need to brew to a lesser volume (around 17-18 litres),add 500g dried malt extract to achieve higher alcohol content and keep the brew temp definitely above 20 deg C to generate more of the fruity, estery type flavours typical of the original.Use Safale S04 yeast.
